Simple yet Delicious Recipes containing Watermelons!

Watermelon Fennel and Parsley Salad Recipe:


watermelon fennel parsley salad-101540145 cups cubed seeded watermelon, divided
1 tablespoon fresh lemon juice
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
4 cups thinly sliced fennel bulb
11/2 cups fresh flat-leaf parsley leaves


How to make it:


Place 1 cup watermelon in a blender, process until smooth.
Strain mixture through a fine sieve over a bowl, reserving 1/4 cup watermelon juice, discard solids and remaining watermelon juice.
Combine 1/4 cup watermelon juice, lemon juice, salt, and pepper in a large bowl, stirring well.
Add remaining watermelon, fennel, and parsley, toss gently to combine.



This is a very easy, healthy Greek recipe that can be served as side dish. And obviously, the main ingredient is WATERMELON!

Watermelon Cocktail Recipe:


Watermelon Cocktail2 cups watermelon balls
Fresh Mint
Powdered sugar
2 Tablespoons of Lemon Juice



How to make it:


With a vegetable cutter prepare small balls of bright pink watermelon.
Sprinkle lightly with sugar and add lemon juice.
Chill thoroughly.
Fill glasses.
Garnish with sprigs of fresh mint.
A pretty fancy is to moisten the edge of each cocktail glass and invert in chopped mint before filling.
This will leave a line of green adhering to the edge of the glass.
The glass may be lined with sprigs of mint before the watermelon is put in.



This is an easy, american beverage that only takes 4 ingredients.
